St. Swithin’s E.S.B. (Extra Special Bitter)
80 Shilling – 5.2% ABV
This malt-balanced beer starts on a caramel note in deep copper hues. The malt is balanced with subtle hopping. The name comes from 19th century Scotland categorization with 80 Shilling being a premium priced beer with greater malt.
Altbier – 5.5% ABV
A German-style ale that originates in the Dusseldorf region, alt refers to the “old” style of brewing with ale yeast (Germany has a very strong lager brewing tradition). This deep bronze hued beer has some malt accents from the use of Munich and Chocolate Wheat malts and has a pronounced hop flavor from imported Spalt hops.
Autumnus IPA - 5% ABV
This brew uses Centennial hops in the kettle and for dry hopping to bring this brew in at a mere 35 IBU’s. This version is more hop forward than the relatively low IBU measure leads you to believe. This is due to the relatively large amount of Centennial hops added at the end of fermentation, giving both flavor and aroma of floral and lemon-citrus hops. It is medium bodied and golden hued.
Batch 100 Strong Black Ale 10% ABV
This epic beer is a numerologist's dream - 100 specific gravity points, 100 IBUs, 100% Centennial hops and 10.0% ABV. Imagine the prodigal son of Black IPA and Russian Imperial Stout, aged in Evan Williams Single Barrel Vintage 1999 Bourbon barrels. Our brewers combine the big hop flavor and aroma and sharp roast malt of a Black IPA with the smooth plum pudding malt and spirit warming of a Russian Imperial Stout. The Bourbon barrels add layers of vanilla, toffee, caramel and oak that increases the complexity to the point of absurdity. Our Batch 100 beer defies categorization, but it is an epic journey in your mouth.
Big Chimney’s Porter 6% ABV
This English-style robust Porter is brewed with English pale, crystal, and black chocolate malts to lend the dark color with ruby and garnet highlights and dark roast and chocolate malt flavors. The hops are English First Gold to balance all the malt notes.
Reynard Black Saison 7% ABV
Our interpretation of Belgian inspired dark Saison brewed with over 8 different imported German and English malts and then gently hopped with German Perle hops. The beer was fermented with a French farmhouse style yeast strain to lend dark fruit notes with hints of cherries and currants that then finishes with a dark chocolate flavor.
Broad Street IPA 7.3% ABV
An American-style India Pale Ale that is brewed with 100% Centennial hops from the Pacific Northwest and then dry- hopped with over 44 pounds of Centennial for an extra fresh hop punch. This beer has a fresh resiny herbal and citrusy grapefruit aroma that follows through to a tingling hoppy herbal bitterness in the finish. The British pale and German Vienna malts provide a biscuity malt sweetness that balances the hop bitterness.
Defender American Pale Ale – 5.2% ABV
An American-style of Pale Ale brewed with a base malt of English Pale malt and a portion of German Vienna malt. This hop forward beer is brewed with the American hop varietal Columbus hops for bittering, flavor and aroma. This beer has a juicy malt flavor that is balanced by the use of the assertive Columbus hopping. Our house ale yeast produces a subtle fruity aroma.
Devil’s Due Belgian Strong Ale – renamed Diabolik
Diabolik Belgian Strong Ale – 8.8% ABV
A Belgian-style Strong Golden Ale made with 100% German Pilsner malt and 100 pounds of sugar; this is a light golden ale fermented with a Belgian yeast strain from the brewery that produces Duvel. This is a seductive beer that has a perfumey citrus yeast character. Served in a Snifter glass due to the high strength of this beer.
Dingo IPA – 5.4% ABV
An American style India Pale Ale made with 32% imported English Pale malt and 68% imported German Pilsner malt, this is a light golden ale fermented with our house ale yeast strain. The kettle addition hops used were American Columbus and Citra hops and then the beer was dry hopped post fermentation with the Australian hop varietal Galaxy hops. Light, juicy malt notes with a pleasant hop citrus fruit flavor.
English Summer Ale – 5.2% ABV
An emerging beer style developing in the UK, golden hued, light malt accented brew made with English pale and German pilsner malts and then lightly hopped with American Citra hops. This is a great beer to enjoy on the hand pump.
Fennec Ale – 4% ABV
Our version of an English Ordinary and our first extreme session beer, our lowest alcohol beer. Light golden hued, light bodied and lightly hopped utilizing the English First Gold varietal to weigh in at a mere 26 IBU’s.
Festivus Ale – 5.6% ABV
An English style Winter Warmer, a big rich, dark, robust beer that is spiced with cinnamon, ginger, and nutmeg. Lots of malt notes, medium bodied and just a hint of English First Gold hops. This is a warming beer to get you through the cold winter months.
Franconian Kellerbier – 5% ABV
The kellerbier or “cellar bier” is an unfiltered golden colored German style lager that is made with pilsener, Vienna and carafoam malts and then aggressively hopped with peppery Spalt hops from Germany.
Geordie Brown Ale – 5% ABV
A Northern English style brown ale in the tradition of Newcastle upon Tyne hence the use of the nickname for folks of that region, known as Geordie's. A malt accented brew made with imported English pale and crystal malts with a touch of roasted barley. Medium/light in body and very lightly hopped with the English hop varietal, First Gold. Flavors of sweet caramel and toffee with a hint of roast malt in the finish.
Golden India Pale Ale – 6.4% ABV
This IPA is a light-colored bold hop-accented brew – one for the hop-heads. The malt character provides a backbone for big Chinook hop character, but it’s a supporting role. The Chinook hops provide bitterness, aroma, flavor and fresh herbal hop character. Dry-hopped with an additional 18 lbs. Chinook after primary fermentation. The overall balance is bitter hops and mineral followed by honeyish malt.
Headcracker English-style Barleywine – 8% ABV
An English-style golden barleywine brewed with English pale and German pilsner malts to lend a light biscuit flavor on the palate. This brew is hopped with the English hop varietal, First Gold to lend just enough bitterness to balance the malt notes.
Rock Star Red Irish Red Ale – 5% ABV
Irish-style red ale brewed with English pale and crystal malts with a touch of roasted barley to yield a brew that is deep garnet in color with toffee/caramel-like flavors and just a hint of roastiness in the finish. This brew has just a hint of hops and is very much malt accented.
Jack the Ryepper – 5% ABV
An American style of beer that utilizes 18% rye malt that lends a tart malt complexity uniqueness that is unlike the typical barley malt flavor found in most beer styles. Crystal malt additions give this beer a rich copper hue and hop additions of Centennial hops work well with the dry finish of this medium bodied brew.
Kölsch – 4.4% ABV
One of our signature brews, this German-style golden ale originates in the Köln (Cologne) region of Germany. Restrained hop bitterness is produced by the use of German noble Hersbrucker hops, which add a subtle fresh piney or spicy note. The authentic Kölsch yeast produces a clean crisp beer with lager aroma notes. German malts provide the backbone.
Kellerbier Kölsch – 4.4% ABV
Our 2011 Great American Beer Festival® Gold Medal award winning Kellerbier style Kӧlsch. Same recipe as our standard Kӧlsch just an unfiltered version served cellar style like a German Brewer might enjoy directly from the lager tank. The experience might not be as crisp as the filtered version due to the presence of yeast and other proteins that are typically filtered out. Try them both and see for yourself!
Lindy’s Weiss - 4.4% ABV
A Bavarian Style Hefe Weizen, or unfiltered yeasty wheat beer, brewed with 50% German wheat malt and 50% German Pilsen malts that is very lightly hopped. Flavors of bananas and clove are a result of the special yeast strain that is used to ferment this beer, a great summer time ale, Prosit!!
Mason's Dark Mild - 3.3% ABV
One of our extreme session beers, this dark roasty malt-accented beer is our lowest alcohol beer yet. This session ale is toffee and chocolate accented with just enough hops to keep the malt sweetness from getting cloying. Brewed with English malts and English Goldings hops, this classic English-style ale was born for the Pub and your pint glass.
Molotov Hoptail – 8.6% ABV
The current rage in American craft brewing, a Double IPA. In our version we refer to it as an East Coast style of Imperial IPA where malt body and sweetness can be discerned with a heavy hand on hop character (unlike those West Coast brewers’ version of overly hopped beer). Loads of Centennial and Columbus hops are used, along with Cascade hop oil.
Oktoberfest Lagerbier – 5.2% ABV
Mad Fox Oktoberfest Lagerbier brings a bit of Munich Oktoberfest to Falls Church. We start with German Pilsener, Vienna and Munich malts and German Hersbrucker hops and ferment with a Bavarian lager yeast. This produces a deep burnished gold colored beer with a rich toasty malt aroma and flavor and enough hops to keep the malt in check with a beautiful highly drinkable balance. Prosit!
Orange Whip IPA – 7.5% ABV
This brew is dry hopped with Citra hops from our friends in Yakima at Hop Union. The kettle additions of Citra hops, brings this brew in at a whopping 75 IBU’s and the hops flavors are much more pronounced with citrusy hints of pineapple, orange etc. This version is also loaded with malt flavors with plenty of crystal malt, medium to full bodied and deep copper colored.
Praha Pils – 5.2% ABV
Our interpretation of a Czech Bohemian Pilsener, inspired by a trip to the Czech Republic by our brewer. Brewed with authentic Bohemian Pilsener malt made from the heirloom Hanka barley varietal and imported Czech Saaz hops. This beer has a spicy herbal Saaz hops aroma that follows through to the hop enhanced flavor, backed up by smooth malt flavor and a dry finish.
Punkinator – 5.0% ABV
Our seasonal pumpkin beer made with 250 lbs. of heirloom Cinderella varietal pumpkins. This beer is also spiced with pumpkin pie spice from Penzey’s of Falls Church, right across the street from our brewery. Medium bodied and very low hopped so the spiced pumpkin flavors are forward.
Rye Baby Pale Ale – 6.0% ABV
Our version of an American Pale Ale brewed with 13% German Rye Malt, Pale, Crystal and Munich Malts. Heavily Hopped with the American hop varietal Chinook solely to 80 IBU’s to showcase that hop characteristic. The piney hop flavors and the notes of the Rye Malt make for a complex flavor meld.
Saison – 6% ABV
Sturdy farmhouse-style ale that showcases a yeast from northern France, along the Belgian border. The earth and spice notes as well as the citrus fruit character are yeast driven. The balance and complexity of the aroma will change as the beer warms in your hand. Medium bitterness and honeyish malt with a semi-dry finish.
Slobberknocker American-style Barleywine – 9% ABV
A big, bold and hoppy American-style Barleywine. This very full-bodied deep reddish hued brew has a rich malt backbone supported by the bold hop flavors of the American grown hop varietal Citra. This strong beer was brewed in December 2010 for its debut in 2011 and will age nicely. We plan on putting some of this beer away to allow the flavors to complex with age.
Oaked Slobberknocker American-style Barleywine 2011 – 9% ABV
Aged in Catoctin Creek Roundstone Rye white oak barrels, Slobberknocker picks up vanilla and hints of toffee along with some oak dryness. This is a very complex sipping beer that rewards the patient as it warms and the barrel character expresses.
Snapped IPA – 6.5% ABV
Our version of an American IPA brewed with English Pale malt and a touch of crystal malt along with mineral additions to the brewing water to enhance the hop character. The American hops used for bittering are the Columbus and Centennial varietals and this brew was also dry hopped with 100% Columbus hops to lend a pleasant hop flavor on the tongue and a floral hop aroma. Medium bodied and just enough of a malt backbone for some balance.
St. James Irish Dry Stout – 4.2% ABV
A Stout beer in the style of the great Irish brews made with Pale, Black and Chocolate malts with a heavy use of Roasted Barley to dry out the palate and lend a very roasty finish to this beer. A very malt accented brew that is lightly hopped with the English hop varietal First Gold. This beer is jet black in color and is unfiltered.
St. Swithin’s E.S.B. (Extra Special Bitter) – 5% ABV
English style ale noted for having extra malt and hop character relative to the lower flavor of Bitter or Mild as found in British taverns and pubs. Our version is made with English Pale and Crystal malts and is lightly hopped with American Citra hops. Color will be light copper in appearance.
Strawberry Blonde – 4.4% ABV
A Belgian inspired fruit beer brewed with Pilsener and light wheat malt, lightly hopped and fermented with our Saison yeast strain. We then add strawberry purée post fermentation to add a light fruit character. Refreshingly light and perfect to enjoy on our outdoor patio.
Stir-About Oatmeal Stout – 5% ABV
A traditional stout beer hand crafted with dark malts, and a heavy dose of roasted barley to give it its coffee-like finish. This full bodied stout will have a dry, malty, smooth body as a result of the addition of flaked oats. Lightly hopped with pleasant malty flavors, very bold flavors for the cold months ahead.
The Elixir Maibock – 6.5%
A deep golden-colored, light bodied seasonal lager. Pilsner, Vienna and Dark Munich malts balanced by Tettnanger hops gives this beer its toasty nose, smooth yet crisp character and late dry finish. Notes of light honey and Hazelnut.
Tinner Hill IPA – 5.4%
An American style India Pale Ale made with 32% imported English Pale malt and 68% imported German Pilsner malt, this is a light golden ale fermented with our house ale yeast strain. The kettle addition hops used were an experimental hop varietal currently known as HBC 342 and then the beer was dry hopped post fermentation with the same. Light, juicy malt notes with a pleasant tropical fruit flavor.
Tuppers India Ink – 7.5%
Our version of a Black IPA brewed in collaboration with Bob and Ellie Tupper of Tuppers' Hop Pocket fame. Dark malts like Chocolate Wheat, Carafa and Black malt comprise the grist and this brew was hopped with Bob and Ellies' favourite hop varietal, Mt. Hood, This beer was then dry hopped with 50 pounds of whole-leaf Mt. Hood hops as well. Inky black in colour and a hopheads dream.
Wee Heavy – 8.6%
A Strong Scotch Ale. This very full-bodied, dark rich brew with a deep sweet malt character possesses hints of toffee, plums and currants. Lightly hopped with English varieties. This strong beer is served in a 12 oz. snifter glass.
Oaked Wee Heavy 2011 – 8.6%
Aged in Catoctin Creek Roundstone Rye white oak barrels, Oaked Wee Heavy intensifies the sweet toffee and dark dry fruit characters while balancing the sweet notes with drying spirit and oak.
Wheat Whacker Wheat Wine – 8% ABV
An American style of Wheat-wine made with 55% wheat malt and 45% pale malt at an elevated strength in alcohol similar to a Barley- wine. This beer is also hopped with the English varietal First Gold to 25 IBU's so it's very lightly hopped and more malt accented. Unfiltered, slightly hazy and burnished gold in color. This will be served in a Snifter glass due to the high strength of this beer.
