What's Brewing at Mad Fox - December 2, 2011

Here's a quick update from Brewer Charlie Buettner for Friday December 2.

BREWING: Yesterday and today are Saison brew days. Next week we'll be transferring the batch 100 from Oak to bright, so we can carbonate and keg. New Years treat?

TRANSFERRING/FILTERING: Moving Festivus next week for Tuesday Tapping on the 13th. Kegged off 10bbl of fresh Keller Kolsch.

FERMENTING: FV1 Kolsch. FV2 Saison. FV3 Orange Whip (dry hopped 11/25. Chilling Monday 12/5). FV4 Wee Heavy (Fermenting away). FV5 Festivus (capped, chilled and filling casks, today). FV6 Altbier (Capped and Chilled. Slowly dropping bright)

SERVING: SV1 Kolsch. SV2 Black Saison. SV3 Oatmeal Stout. SV4 Molotov Hoptail. SV5 APA. SV6 Brown Ale.

CASKS: Oatmeal stout, APA, ESA. Coming soon: Stone IPA (ready tomorrow), Festivus and Wee Heavy.

GOING/GONE: Punkinator and Rye are gone. Rye Baby will be done next week.

TUESDAY TAPPING: 12/06 Molotov Hoptail Imperial IPA. 12/13 Festivus Ale. 12/20 Orange Whip IPA

BARRELS: Next week we carbonate and keg the Batch 100 Black Ale that has been aging in our eight 53-gallon Bourbon barrels.
